Oak is the safe choice that still looks considered: pale enough to keep a narrow hallway feeling open, warm enough to stop a white room reading clinical. At wainscot height it gives you the slat-wall look on the bottom half of the wall only, which is both cheaper than full-height paneling and easier to live with. The slat face also helps reduce echo and absorb unwanted noise.
